The Project
indoVINO is a winemaking project in both Sierra de Gredos, Spain and the Western Slope of Colorado. Started during the harvest of 2022 from a series of happy coincidences, I am excited to be producing the third vintage of small batch, handcrafted wines from two places I call home.
The wine is named after my family, Indovino, and translates to ‘see in the future’ or ‘to guess’ in Italian. This name embodies the spirit of the project and winemaking in itself, taking a risk and seeing what the future holds.
The Philosophy
My goal is to make wines that are made sustainably and honor the places they are from. I also want to make wines that are dynamic, playful, and unpretentious.
I source my fruit from local, organic vineyards farming responsibly, and look forward to farming myself someday in the future. I ferment the wine with its native yeast, to better reflect the unique microclimate it’s from, and avoid the use of additives. My wine is unfiltered and unfined so it arrives on the table still full of its original magic.
Most importantly I want to build a community through wine. indoVINO is about bringing people together. Sharing memories around the dinner table with family, sparking new friendships at tastings and events, and connecting people to rural landscapes and agriculture both near and far.
The Winemaker
Nicole Indovino
While completing a biology degree, I spent a semester studying a fungus infecting coffee farms in Costa Rica. I enjoyed working in nature’s seasons, the detail and care of specialty agriculture, and its intersections with culture, food, art, and history. This led me to work a harvest in Napa Valley. Before I even started to really appreciate wine, I fell in love with the rhythm of working harvests; monitoring the fermentations, punching down grapes, and cleaning tanks. I went on to work under several accomplished and knowledgeable winemakers in wineries ranging in size, style, and climate. After time spent in the cellars and vineyards of Napa Valley, New Zealand, Chile, and Spain, and somewhere in between completing a Master’s degree in Enology and Viticulture in Montpellier, France, I’ve now reached a place where I am excited to use everything I’ve learned, and continue learning with my own project.
